On your profit, not your turnover. The first £12,570 of your total income is the personal allowance and is untaxed. Above that you pay income tax at 20% up to £50,270, then 40%.
Separately, Class 4 National Insurance is 6% on profits between £12,570 and £50,270, and 2% above that.
Profit is what the platforms paid you minus your allowable expenses - and for a driver the mileage allowance is the big one, at 55p for each of your first 10,000 business miles. It routinely takes a third or more off turnover, which is why the effective tax rate on delivery income is usually far lower than people expect.
If you also have a PAYE job, that job normally uses your personal allowance first, so more of your delivery profit is taxable. Income tax rates (opens in a new tab).
