Should I register for VAT voluntarily?
Rarely worth it for a delivery driver. Your customers are platforms that would not care, and you would be charging VAT on services you currently supply VAT-free.

Rarely. Voluntary registration makes sense when your customers are VAT-registered businesses who can reclaim what you charge them, and when you have significant VAT on your own costs to recover.
For a delivery driver neither usually holds. Fuel carries VAT, but the mileage method already gives you relief on it through income tax, and the reclaim mechanics on mileage are fiddly.
Against that you get quarterly VAT returns forever, Making Tax Digital for VAT, and a rate to charge that has to be handled correctly with each platform.
It is a decision worth taking with an accountant looking at your actual numbers, not one to make on a rule of thumb from a forum.
