How does Uber commission affect my tax?

Uber's service fee is a cost of doing business, so it comes off as an expense. What goes on your return as income is the gross fare the passenger paid, not the net figure that reached your account.
The two approaches give the same profit, so it is tempting to think it does not matter. It does, for two reasons. Turnover is what the trading allowance, the VAT threshold and the Making Tax Digital thresholds are measured against, and getting it wrong can put you in or out of scope of all three.
Your platform statements show both figures. Use the gross as income and the fee as an expense, and the arithmetic reconciles either way.
The same logic applies to any platform that takes a cut before paying you, which is most of them.
